  • 2 tablespoons granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup milk
  • 1 egg
  • 1 teaspoon vanilla extract
  • 2 tablespoons melted butter
  • Cooking spray or additional butter for cooking

Instructions
 

  • Mix: In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  • Combine: In another bowl, mix milk, egg, vanilla extract, and melted butter.
  • Blend: Pour the wet ingredients into the dry ingredients and stir until just combined (do not overmix).
  • Heat: Preheat a non-stick skillet or griddle over medium heat and grease lightly with cooking spray or butter.
  • Pour: Using a teaspoon or small scoop, pour small dollops of batter onto the skillet.
  • Cook: Wait until bubbles form on the surface and the edges set, then flip and cook until golden brown on both sides.
  • Serve: Stack the mini pancakes and serve warm with syrup, fruit, or your favorite toppings.

  • For a fluffier texture, let the batter rest for 5 minutes before cooking.
